Mahi Mahi w/mango salsa

Dinner was delicious last night! Lately I've been feeling like my dishes have been coming out-not that great. Last night was better though. I had some frozen mahi mahi and earlier in the day my dad had brought over some produce with included mango's.

I looked up a mahi mahi recipe online but I didn't stick completely to it. Here is what I did for the mango salsa.

Mango salsa iingredients

- 1 mango (diced)
-1 tomato (diced)
1/4 cup cucumber (diced)
2 tablespoons of white or red onion (diced)
1 teaspoon serrano or jalapeno pepper (diced) (if you like it hotter, put more)
1 tablespoon of cilantro (diced)
Add some lemon juice and salt to taste.

All you have to do is just mix those ingredients and add some lemon juice and salt to taste. You can really add more or less of any item. So easy and good. I had enough to top to fish fillets and still had some left over.

Mahi Mahi ingredients

2 mahi mahi fillets
1/4 cup coconut juice
6 tablespoons lime juice

Combine 3 tablespoons milk and 3 tablespoons juice in a shallow dish; add fish, turning to coat. Cover and marinate at room temperature for 15 minutes.

  Remove fish from dish; discard marinade. Sprinkle fish with remaining 1/2 teaspoon salt and pepper. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Cook fish 4 minutes on each side or until desired degree of doneness. Serve with mango salsa. Garnish with lime slices and cilantro sprigs, if desired.
